Sweet and sour pumpkin-- a guest post



Hello everyone! As you all know I am having my very first event of guest posts, and today's post is by Sanoli from Sanoli's kitchen  and she  is my first guest. Read on in her own words about herself and the recipe she is sharing.

Now something about me, I am Sanoli, living in United States. Presently full time homemaker, I am a foodie and I like to cook in different ways, like to do constant experiments on that. Yes, you can say, cooking is my passion. I had an opportunity to live different parts of India as well as abroad for my job or with my husband to get a chance to mix up with different cultures as well as cuisines. I like fusion foods as well as authentic Indian foods. I am very newcomer in this blogging world. This is my first guest post, I never did any guest post before it, so little nervous, don’t know you people will like my simple recipe or not. This sweet and sour pumpkin is easy and simple Indian vegetarian dish, which quite satisfied our tastebuds. So, I am confident enough to share this recipe here.

Pumpkin has a large content of trace elements and vitamins. It is advisable to use the pumpkin with any cardiovascular diseases, with edemas, anaemia and obesity.

Pumpkin originated from the Greek word ‘pepon’, which means large melon. British changed to ‘pumpion’ and later the colonist of Americans changed to the word what we call today, is pumpkin.

This is an exceptionally delicious dish, cooked salty, tangy, sweet and spicy altogether makes it very delightful. Dry mango powder and lime juice give a tangy taste and sugar / jaggery gives a flavorful sweetness, which goes excellent with rotis, puris or parathas.

SWEET AND SOUR PUMPKIN

INGREDIENTS:
0.5 lb / 225 gm Yellow Pumpkin
½ tsp Cumin seeds (jeera)
½ tsp Fennel seeds (saunf)
1/3 tsp Fenugreek seeds (methi)
1 Whole dry red Chili (sukhi lal mirchi)
¼ tsp Asafoetida (hing)
1/3 tsp Turmeric powder
½ tsp Red chili powder
½ tsp Coriander powder
½ tsp minced Ginger
½ tsp freshly pounded Garam masala
2/3 tsp Dry Mango powder (Amchur)
1 tbsp Lime juice
1 tbsp Sugar/jaggery
1 tbsp finely chopped Coriander leaves
1 tbsp Clarified Butter + 1 tbsp Oil
Salt to taste

METHOD:
Peel and wash pumpkin. Cut in small cubes.

Heat clarified butter and oil in a wok. Add dry red chilli, cumin seeds, fennel seeds, fenugreek seeds and asafoetida in it. Saute for 40-50 seconds.

At this time, add turmeric powder, minced ginger and pumpkin cubes in it. Stir for 2 minutes, then add coriander powder, red chilli powder, garam masala and salt in it. Keep covered and cook for 10 minutes on medium low heat. Stir occasionally.

Now add sugar, mango powder and lime juice in it. Fold nicely for 2 minutes. Switch off heat now. (This time pumpkin becomes soft and tender. Don’t over cook, else pumpkin will melt.)

Garnish with chopped coriander leaves. Enjoy this dish with hot rotis, parathas or puris.

TIPS: In this recipe, pumpkin becomes soft and tender. Don’t over cook, else pumpkin will melt.
