Kachori-- fried pattice with potato filling



Hello friends!  My today's recipe happens to be my all time favourite and the best kachoris which is today's dish to me had always been by my mother and my sister in law. So I am dedicating this post to both of them. 
I am sure all of you must have tasted kachoris before but this version  is simple one and yet yummy. I know you would all love this. So shall I begin...



Ingredients:

Maida 1 cup

Oil  3-4 tblsp.

Salt  to taste

Asafoetida pinch

Potatoes  5 – 6 .

Green Chillies  3-4

Ginger  1” piece

Mint leaves 1 tblsp.

Coriander leaves 1 tblsp.

Dry Mango powder/ amchoor   1tsp

Coriander Powder 4 tsp.

Red Chilli Powder  2 tsp.

Garam masala    1tsp

Oil  for frying

Method:

Boil the potatoes, peel and mash them. Add salt and other masalas including coriander leaves and mint leaves. Mix well and make small sized balls and keep aside.

Take maida in a bowl. Add salt and oil and make  a soft dough.  Keep it aside.

Make small balls of dough for making poori. Here there is two ways to make kachori. One take a ball of dough in palm and flatten it thin till it resembles poori or  use rolling pin and make poori out of it. Just dust some dry maida on board and roll out poori. Stuff the potato mixture and pull the dough inside to close it properly. Once sealed flatten it slightly and keep aside.

Heat the oil for frying on a medium flame. Deep fry the Kachoris on a medium flame till they are golden brown in colour. Remove and put them on kitchen paper to drain off excess oil.

Kachoris are ready and they can be served hot or cold as accompaniment or as tea time snack too. They are great as party snacks too.

Note: Adjust spice level according to personal taste.

  4. I made this type of kachori with peyaj. Potato kachori is also very tempting. very crunchy snacks with evening tea time snacks.

  14. Awesome aunty! I always think of making my own whenever I eat them from my local Indian store. Now I have the recipe...How do I reheat them? Can i Heat them in the oven or microwave. Thinking of making it as an appetizer for my son's B'day :)
