Rava kesari-- 100th post



Hello friends! This recipe of mine was to celebrate my 100th post plus crossing 100 followers.So a big thank you all for supporting me through out this journey which at one time I felt was impossible. But as they say  I M POSSIBLE , so here I am with a sweet which I made first time though I had eaten many times.  This time after my recent vacation where in breakfast I always had rava kesari I was determined to make it but I got absent minded and forgot all about it till I had it again.  So here it goes and well it was trial and error as I had to go through everyone’s blogs to read how it is made but end I made it using what I felt was right for me.

Ingredients:
  • 1cup sooji/rava
  • ½ cup sugar
  • 1 ½  cup water
  • A pinch of orange or yellow food color
  •  Ghee according to the need
  •  1 pinch of saffron/kesar
  •  1tsp cardamom powder
  • To garnish dry fruits ( I used almonds, raisins and cashews here)
Method:

Boil  the water and add the color as needed. A little pinch should be enough. In another pan heat 1tbsp ghee and  slight fry the dry fruits and keep aside. In same pan add 1 or two tbsp more ghee and roast the rava for few mins till it changes slight color. Add boiled water little by little and mixing the rava same time so it does not form lumps. Stir and then add sugar as needed. Stir again till sugar melts and rava leaves sides.  Finally add saffron and  cardamom powder and some dry fruits and mix. Serve garnished with remaining dry fruits.

Notes:
The quantity I gave above is just for representation purpose only. So kindly adjust accordingly. For me  just 4 tbsp ghee was enough. 

Verdict:
Rava kesari I finally made it and it was loved a lot in my family. I had made a lot of quantity so I  reheated next day in my oven.

    Rawa kesari is one of the easiest n delicious sweets i too make :D

    Only change i make is i add sugar first to roasted suji n then add water later but the end produce is same :)
