Hello friends! My today's dish is easy and simple one yet again. I guess I made too many cakes so needed something else now. What better than to have sprouts. A healthy, yet yummy and fulfilling dish which can be eaten just like that or use it with roti chapati or if you are innovative use the sabzi as filling for samosas. Check out my moong sprout samosa in one of my earlier posts HERE.
Ingredients:
1 cup sprouted moong
2 boiled potatoes
1 chopped tomato
1 onion chopped
2-3 garlic cloves chopped
1 small piece of ginger chopped
2 green chillies chopped
salt to taste
1tbsp oil
1 tsp jeera
a pinch of hing
1tsp red chilli powder
1tsp haldi powder
1tsp coriander powder
1tsp amchur powder
coriander leaves to garnish
Method:
Boil the sprouts and keep aside. Peel and dice the potatoes. In a pan, heat oil, add hing and jeera. Let it splutter and add chilli. Add onions and saute. Add ginger and garlic and saute it for a minute. Usually I have seen garlic sauted first but I think garlic burns faster that's why I add it later. Add tomatoes now and saute till they turn bit softer. Do not make tomatoes mushy. Finally add sprouts and diced potatoes and add all masalas. Give gentle stir so all masalas mix well with sprouts and potatoes. Serve hot garnished with coriander leaves and as I mentioned you can use this dish to make samosa filling too. Hope you all like this and over to you for feed back.
