Hello friends! Today I bring you a wonderful, easy and yet yummy dish. Sindhi tomato curry has many varieties, but i have made use of regular vegetables. Try it and I am sure you would love it.
Ingredients:
- 5 tomatoes
- 2-3 tbsp besan
- 4-5 lady finger ( bhindi)
- 4-5 cluster beans ( gwar)
- 2 small potatoes
- 1 small piece of yam ( jimikand)
- 2-3 green chillies
- 1tsp cumin seeds
- 1tsp mustard seeds
- few sprigs of curry patta
- 1tsp turmeric powder
- 1tsp sugar
- salt to taste
- 1tsp oil for tempering
- coriander leaves to garnish
Method:
Blanch the tomatoes and peel the skin. I, however, kept the skin on and boiled the tomatoes as it is. Blend the tomatoes and make puree. Keep it aside. Wash, peel and chop the vegetables. Mix besan in little water and make sure no lumps are there. In a wide pan, heat the oil and add the tempering of cumin seeds, mustard seeds, curry patta and green chillies. Once they crackle, add tomato puree and add water accordingly. Stir and add the salt, turmeric powder and sugar. :Bring to one boil and add the above vegetables. Reduce the heat and let it boil. Once vegetables are cooked add the besan mixture we made and stir it. Besan mixture would give it right consistency. Adjust the curry level and switch off the gas.
Garnish with coriander leaves and serve it with plain rice or even pulaos.
The curry has many variations and some people add cauliflower and other vegetables but I felt it becomes more like mix veg in tomato gravy. Sugar is to counter the effect of sourness of tomatoes.
This curry is mostly made without onion or garlic. There is a bigger version of this curry which I may put some other time.

ReplyDeleteI have used Amul fresh milk cream and beat it in chilled bowl till fluffy. After that I have beaten the whole mixture for about 15-20 minutes. To avoid ice over the top I used covered containers and jars to set the kulfi. And it really tasted good , like the store brought. Hope this will help you dear.
