Hello everyone! My today’s recipe is very famous street food of Mumbai, Ragda patties. Some months back I had done a series on Mumbai about its landmarks, street food and nearby places to visit and that time someone had asked me for recipe of ragda pattis. I hadn’t started posting recipes that time but soon I started and now my blog is having the recipes or dishes which I make at my home.
My recipe may not resemble the way its given on streets or maybe at some homes but this is my simplified version of it and you are free to modify it as you desire. So shall we start now.
Ingredients for ragda:

- 200 gms white vatana soaked overnight
- ½ tsp mustard seeds
- 1/2 tsp red chilli powder
- ½ tsp turmeric powder
- ½ tsp garam masala powder
- Salt to taste
- 1 chopped onion
- 2 chopped green chillies
- 1tbsp ginger garlic paste
- 1 spoon of tamarind soaked
- 2tbsp oil
Method to make ragda:
Wash and drain the water from soaked vatanas. In a pressure cooker, heat oil and add mustard seeds and green chillies, once mustard seeds splutter add chopped onion and cook till onions turn translucent. Add ginger garlic paste stir and then add other masalas. Mix and then add soaked vatanas and add one cup water. Squeeze juice out of tamarind and add it to the mixture. Add salt and close the lid on pressure cooker. Keep it for 3 whistles or till the vatana is cooked. Keep it aside.
Ingredients for pattis:
- 6-8 boiled potatoes
- 3-4 bread slices
- Salt to taste
- Few coriander leaves and 1 green chilli(optional)
- Oil to shallow fry or deep fry
Method:
I had used shallow fry method so following this only. Mash the potatoes and mix bread pieces and salt. Add coriander leaves and chopped chilli if desired. Give shape to patties and shallow fry in pan till its cooked on both sides. Keep it aside.
Serving suggestions:
Take a plate and arrange patties. Pour ragda on top and garnish with onions, thin sev and coriander leaves. You can also make green chutney and tamarind chutney as garnish. My recipe did get long but in reality its not that difficult. I had forgotten to garnish with onion in these pics.

And regarding the bun making, you must have got a round tray with your OTG ..I was using that in Mumbai to make all my baked stuff.Try it out.
