Hello friends! My today's dish is with sweet potato which is also called shakarkandi in Hindi. I have never used this to make a curry or side dish and this was again impromptu use of this delightful vegetable. Usually in my home sweet potato is washed peeled and sliced. Then deep fried and later sprinkled with salt and red chilli powder. It serves the purpose of side dish also. But this time I made a dry curry with it. Let us begin.
Ingredients:
- 3-4 sweet potatoes
- 1 onion chopped
- 1 tomato chopped
- 2-3 green chillies
- 1tsp turmeric powder
- 1tsp coriander powder
- 1 tsp amchoor or dry mango powder
- 1tsp red chilli powder
- 1 tsp garam masala powder
- 1tsp ginger garlic paste
- salt to taste
- 1tsp cumin seeds
- 1-2 tbsp oil
- coriander leaves to garnish
Method:
Peel the sweet potatoes and wash them. Chop them into small cubes and boil in little water. Once cooled drain off all the water. In a pan, heat oil and add cumin seeds. Once it splutters add onions and saute it for few mins till they appear translucent. Add chopped green chillies and ginger garlic paste. Saute it for a minute or two. Then add chopped tomatoes and mix well. Add few spoons of water and cover the pan to cook the tomatoes. Open the lid and add boiled sweet potatoes and add all the masalas including salt. Stir it nicely and let it cook for a minute. The curry is ready.
Garnish with coriander leaves and serve it hot with chapati or poori or roti.
